Full English Breakfast

A good fry-up will keep you full all morning and maybe even longer!

If you can’t get Slimming World sausages (they’re available at Iceland stores), use other low-fat sausages and count the Syns.
Ingredients

2 potatoes, peeled and cubed
4 frozen Slimming World Syn-free Pork Sausages
Low-calorie cooking spray
2 tomatoes, halved
200g button mushrooms, sliced or halved if large
1 onion, sliced into rings
4 back bacon rashers, visible fat removed, cut into thick strips
2 eggs
400g can baked beans
Small handful of roughly chopped fresh parsley
Method
  1. Preheat your grill to high.
  2. Cook the potatoes in lightly salted boiling water for 10 minutes, then drain well.
  3. Meanwhile, cook the sausages according to the pack instructions.
  4. Spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the tomatoes, mushrooms, onion, bacon and potatoes and fry everything for about 5-10 minutes, or until the vegetables are tender and the bacon is cooked, turning as required.
  5. At the same time, spray another non-stick frying pan with low-calorie cooking spray and place over a medium heat. Cook the eggs for 5 minutes, or until done to your liking.
  6. Heat the baked beans in a small saucepan.
  7. Divide everything between warmed plates (beans on the side if you prefer), season lightly and scatter over the parsley. Serve with ketchup (1 Syn per level tbsp) and a cuppa!
