A Free tagine-inspired soup with chickpeas, vegetables and a hint of Moroccan spices.

Ingredients
1 large onion, roughly chopped
1 celery stick, roughly chopped
3 large garlic cloves, chopped
3cm piece fresh root ginger, peeled and chopped
120g prepared butternut squash, roughly chopped
50g dried red lentils
1 tsp ground cinnamon
1 tbsp cumin seeds
½ tbsp mild chilli powder
2 tbsp tomato purée
400g can chopped tomatoes
2 vegetable stock cubes, crumbled
½ x 400g can chickpeas, drained and rinsed
1 small red pepper, deseeded and sliced
1 small yellow pepper, deseeded and sliced
200g cauliflower, cut into small florets
Lemon juice, to taste
Salt and freshly ground black pepper
Method
- Put all the ingredients apart from the chickpeas, peppers, cauliflower and lemon juice in a large saucepan. Add 850ml boiling water and bring to the boil over a high heat. Reduce the heat to low, cover and simmer for 25 minutes or until the vegetables are soft.
- Blitz until smooth using a stick blender (or use a food processor or liquidiser and return to the pan).
- Add the chickpeas, peppers and cauliflower, cover again and simmer for 15-20 minutes or until the vegetables are cooked, stirring occasionally.
- Season to taste with lemon juice, salt and pepper and serve hot. Enjoy!
