Vegetable Tagine Soup

A Free tagine-inspired soup with chickpeas, vegetables and a hint of Moroccan spices.

This tasty dish is part of our Free Food range, available exclusively at Iceland. But it’s also a doddle to make at home when you have a little more time.
Ingredients

1 large onion, roughly chopped 
1 celery stick, roughly chopped  
3 large garlic cloves, chopped
3cm piece fresh root ginger, peeled and chopped
120g prepared butternut squash, roughly chopped
50g dried red lentils
1 tsp ground cinnamon 
1 tbsp cumin seeds 
½ tbsp mild chilli powder
2 tbsp tomato purée 
400g can chopped tomatoes
2 vegetable stock cubes, crumbled
½ x 400g can chickpeas, drained and rinsed
1 small red pepper, deseeded and sliced
1 small yellow pepper, deseeded and sliced
200g cauliflower, cut into small florets
Lemon juice, to taste
Salt and freshly ground black pepper
Method
  1. Put all the ingredients apart from the chickpeas, peppers, cauliflower and lemon juice in a large saucepan. Add 850ml boiling water and bring to the boil over a high heat. Reduce the heat to low, cover and simmer for 25 minutes or until the vegetables are soft.
  2. Blitz until smooth using a stick blender (or use a food processor or liquidiser and return to the pan).
  3. Add the chickpeas, peppers and cauliflower, cover again and simmer for 15-20 minutes or until the vegetables are cooked, stirring occasionally.
  4. Season to taste with lemon juice, salt and pepper and serve hot. Enjoy!
